GREEN GODDESS DRESSING

  • ½ medium avocado

  • 3 tbls. Low fat mayonnaise

  • 3 tbls. Low-fat yogurt

  • 1 tbls. Water

  • 2 chopped scallions

  • 1 garlic clove

  • 2 tbls. Chopped basil

  • 1 tbls. chopped fresh parsley

  • 1 tbls. chopped fresh tarragon

  • 2 tsp. Lemon juice

  • Salt & pepper to taste

1- In a blender or food processor, combine the first six ingredients, puree until smooth.
2- Add basil, parsley, tarragon and lemon juice until combined. Season with salt and pepper to taste.
