GREEN GODDESS DRESSING
½ medium avocado
3 tbls. Low fat mayonnaise
3 tbls. Low-fat yogurt
1 tbls. Water
2 chopped scallions
1 garlic clove
2 tbls. Chopped basil
1 tbls. chopped fresh parsley
1 tbls. chopped fresh tarragon
2 tsp. Lemon juice
Salt & pepper to taste
1- In a blender or food processor, combine the first six ingredients, puree until smooth.
2- Add basil, parsley, tarragon and lemon juice until combined. Season with salt and pepper to taste.
