MOTHER'S DAY BREAKFAST IN BED
I remember when my kids were younger and I would wake up on Mothers Day and I could hear them in the kitchen making breakfast for me. At first, it was easy to be more worried about the mess they are making in the kitchen, but I would forget all that as soon as they would walk into the room with their sweet smiles, looking so proud of what they had made. They would literally stand over me saying “Do you like it mom?? Eat it! Eat it now!”. I have eaten my fair share of crazy creations in my years as a mother, but it seriously is one of my favorite things.
Sometimes you have to encourage your husband to go get them going in the morning though! The one thing my kids always insisted on was that I stay in bed as much as possible! So even when I wanted to get out of bed and go get coffee, they wouldn't let me. Sometime I would just have to tiptoe out, get my coffee and go pretend I was still asleep when they came in. The things you do for your kids!
Our kids really do just want to do something special for us on Mother's Day and I think it is just darling when they try their hand at making breakfast in bed. So I thought I would share with you a few cute and easy recipes that your husband can help them along with. I am usually the one who bought the groceries for the breakfast anyhow, so maybe with a little help for dad, they will make something you will love to eat, and not just a concoction made from whatever is in the pantry. Ha!
Your kids can use any shape cookie cutter they like and stamp out the middle of a slice of bread, then all they have to do is drop an egg in the hole and cook like normal.
These recipes are easy for your kids to make and really do taste good. I got my tray from Goodwill for a quarter and painted it white and a candle from Otherland to help make it pretty. With a few helpful tips and an obviously placed tray, your kids will be able to treat you to the best breakfast in bed their little hands can make!

TRAY | I got mine from Goodwill and painted it white
BAGEL QUICHE
- 1 bagel (any flavor that would go well w/ egg)
- 2 to 3 large eggs
- Desired fillings (I used spinach, goat cheese, sun-dried tomatoes and salt & pepper)
1. Preheat oven to 375 degrees F. Spray a piece of foil with nonstick spray.
2. Slice the very bottom of the bagel off nice and evenly. Set aside to eat, turn into breadcrumbs or discard.
3. Carefully hollow out the bread inside of the cut bagel using your fingers to pull the bread away from the crust of the bagel (discard or turn into breadcrumbs). Set the bagel, cut-side-up on the foil.
4. Whisk 2 eggs and pour them into the hollowed out bagel. Place desired filling choices into the egg. If the egg and filling does not fill the bagel completely, you can add another whisked egg on top.
5. Wrap the bagel up the sides with the foil, but keep the top open to the heat of the oven. Bake 20 to 30 minutes, or until the egg is completely set. Timing will depend on how many eggs used and how large the bagel is. Serve immediately

1. Whatever fruit you like, cut into bite size pieces and top with yogurt
2. Add granola or any desired topings
