SANDI'S SHORT RIB RAGU

If you remember, a few weeks back my mother-in-law was in town. Talk about a woman I look up to and admire. If there is one person who knows how to raise children, juggle sports, work, cook, clean, ALL THE THINGS...it's Sandi. So, she's an absolute pro at whipping up easy weeknight meals that are both filling and delicious. Not to mention, my husband grew up on it, so he’s already a big fan! Which brings me to her Short Rib Ragu recipe...ENJOY.

WHAT YOU'LL NEED


  • 1 tablespoon olive oil

  • 4 6 oz. bone in short ribs

  • 3/4 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon oregano

  • 1 yellow onion, finely chopped

  • 3/4 cup carrot, chopped

  • 1/2 cup celer, chopped

  • 4 garlic cloves, minced

  • 2 tablespoons tomato past

  • 1 can (28oz) crushed tomatoes

  • 1 cup water or tomato juice

  • Fresh basil, diced

WHAT TO DO


1. Combine all ingredients in crock pot on high for 4 hours or low for 6-8 hours.

2. Remove the bones.

3. Serve over wide noodle OR spaghetti squash with crusty french bread...Yep, it's that easy!
