ZUCCHINI BREAD
Oh, Sandi..... that's my mother-in-law btw, she's always bringing the good stuff when she comes. She's been making this bread for years. It's a family fave! When she was here last time we got in the kitchen together and put all those zucchini from my garden to good use. It's so dang yummy. Yes, not keto, but I just can't stay away. That's why I only let her bring it once a year.

WHAT YOU'LL NEED
1 cup oil
2 cups sugar
2 cups grated zucchini (you can use a plank grater, box grater or food processor)
3 eggs
1 teaspoon vanilla
2 3/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
WHAT YOU'LL DO
1. Mix all ingredients together.
2. Grease and flour 2 bread pans.
3. Bake at 325 degrees for 50 to 60 minutes. Yields 2 loaves.
