CHERRY TOMATO + SUGAR SNAP PEA COUSCOUS
Let me introduce you to one of my favorite people in the world. I mean the WHOLE WIDE WORLD. Friends, meet Susie Light. She's one of those people you just want to be around and when you're apart, which unfortunately is more than I'd like, I miss her like crazy. She's also married to a real gem and one of my husbands best buddies. Listen, when the four of us get together, there's no tellin' what trouble we might get into. That's another blog post.
She always looks good in jeans, has great hair, naturally beautiful, patience of a saint, an incredible sense of humor, effortless style, a relaxed demeanor and is the only vegetarian I know that eats bacon. Ha! My carnivore husband loves to razz her about that one. She is always cooking up something healthy and delicious for her family of five. She's one of a kind and I adore her. So, when she told me she was contemplating, starting a blog or having another baby {that would be her 5th} I said, START THE BLOG! I'm so thrilled she did. Susie's got so much goodness to share. I've made this Cherry Tomato + Sugar Snap Pea Couscous recipe before, actually about 20 times. And every time, it's just as good as the day Susie made it for me. It's fresh + crisp + light and is really the perfect summer side dish. I also love whipping it up for lunch for myself. I'll make a batch on Sunday night and eat from it all week. I like to throw a grilled chicken breast or salmon on top. Mmmmmmm! You've got to make this one. I also LOVE her White Bean Dip. Lucky for us, it's the other recipe she posted on her blog, <high five> 'cause I never got the recipe from her for that one.
Now, Susie cuts her pita chips into hearts, my family is going to get a bag of Stacy's Pita Chips thrown at them.

or a quick lunch from the fridge. It’s the kind recipe that can be made ahead of time because the longer
it marinates, the better it tastes. I used to make it with cheese tortellini, but it tastes great with
any pasta, quinoa, rice, or in this case couscous.'
RECIPE
CHERRY TOMATO + SUGAR SNAP PEA COUSCOUS
INGREDIENTS:
1 cup pearled coucous
1 cup halved cherry tomatoes
1/2 cup chopped blanched sugar snap peas
DRESSING:
1/2 cup olive oil
3 tablespoons white vinegar
3 tablespoons fresh chopped basil, or 1 teaspoon dry
2 tablespoons chopped green onions
1 1/2 tablespoon dijon mustard
1 or 2 chopped garlic cloves
1/2 teaspoon sugar

Cook couscous according to directions on package, then rinse in cold water and drain.
Blanch sugar snap peas for 1 1/2minutes, then transfer them to bowl of ice water.
Put all ingredients for dressing in a container, cover, and shake well.
Combine couscous, cherry tomatoes, sugar snap peas, and dressing in bowl and mix.
Refrigerate for a couple hours before eating. The longer it sits, the better it tastes!
